Three day sprouted spelt and buckwheat berries, pumpkin seeds and oats complement one of three ancient grains:

Einkorn - The oldest and most primitive known wheat. It’s high in protein, and differs in nature to other wheats - lacking the D chromosome connected to intolerances

Emmer - High in protein, dates back to Ancient Egypt and the first leavened breads

Khorasan - Khorasan flour is high in protein with a rich nutty buttery flavour. This flour is sourced from remote independent farms in Italy.
